Broccoli Piccata

I never thought I would actually CRAVE broccoli, but it's true! I've been craving Broccoli Piccata, steamed broccoli with lemon and capers from my first book. I made it more "Fuhrman-Friendly" by leaving out the oil and salt.

At mealtime I tossed the broccoli with my salad, hummus, and crunchy walnuts.

Are you using the hummus in lieu of dressing?

I LOVE Hummus on my salads!!! I use it instead of dressing, or else I just add a little extra lemon juice. It's so refreshing!

I'm very excited to have found your blog. My son and I have been teetering with being vegetarian for a long time and just pinky swore that we would be meat free from now until infinity ;) What great ideas you have for lunch... all look exactly like what he loves to eat. Fun fun!

Just discovered your blog and I love it! I decided today that for 30 days i would be vegetarian and i am so glad that you have these yummy recipes on here! I am also pleased to see that you use so many reusable items. I myself am very passionate about living trash free/zero waste. I have found that it is very hard to get meat without plastic and foam packaging so i guess this is the natural direction for me to go in :) oh by the way my blog is at http://trashfreeliving.blogspot.com/ in case you wanted to check it out.
